Roman&#039;s comment was about a woman who refused to tip a driver. Thanks for noticing that.

What a great story, I grew up in Chicago too and remember the same thing (probably the same dude) The guy, in a white tee shirt, chest hair climbing out like a tassle of prisoners. He would toss and toss, larger and larger. What a great memory.

I&#039;ve tried several different non-gluten pies and in my store we are getting one called &quot;Still Riding Pizza&quot; It does have egg but no gluten. At the World Pizza Championships 2 years ago, I saw some fully enclosed mini-kitchens that they build in italian pizzerias. A pizza guy/gal puts on a plastic suit and hat, enters the plastic 4 X 6 room and forms a non-gluten pizza from scratch. Awesome accomodation, but not something that we here in the U.S. are interested in because of all the lawyers and folks willing to sue at a drop of a hat.

Anyway, I&#039;ll have some video in a soon to be released blog entry with the top dough tossers from this year. We (the U.S. team) won 3rd place with a guy who had a broken ankle. Cool

		<description>Well I&#039;m not sure what&#039;s up with Roman (above comment), maybe he&#039;s hungry, or it&#039;s his nap time, but I can&#039;t wait to try your gf pizza crust. Thanks so much for doing all the hard work and research and coming up with this recipe, and then sharing it with us. 
My earliest pizza experiences were when I was growing up in the South Chicago area, (Harvey, Tinley Park, Blue Island) and going with my dad to get pizzas that were as big as a swimming pool (to my small eyes at least) from a place in Harvey where the bottoms of the crusts were dusty with cornmeal, and the slices made a swishy sound when you went to scoop them up off the paper. (They came in a paper thing I seem to remember.) The &quot;pizza man&quot; would throw the dough way up in the air and catch it on the way down, then up again without even slowing down in between. I loved watching this, but my dad didn&#039;t have too much trouble dragging me away, because I knew as soon as we got home, there was PIZZA!! I loved this pizza (and the cornmeal bottomed Italian bread they made, we ate the crust and threw away the middle) and never tasted anything like it again until I found a little place in the mall in Panama City Florida. It had to be the same guy, but he hadn&#039;t aged a bit!
Anyway, you see why pizza is a love of mine, and now I CAN&#039;T EAT IT ! ! ! ! I am one of those people of which you write. Glutenin and gliadin are mine enemies.

in New Mexico, where there is no decent, edible gluten free pizza, except at Uno&#039;s, which is an hour away. And it&#039;s not good warmed over, or cold. (Used to love cold pizza for brekky.) But the sun is a shinin&#039; and life is good, now that I know what to avoid.</description>
